Beef Nacho Casserole

 1 lb. ground beef (I actually used ground turkey and it was great!)
1 cup frozen corn, thawed
12 oz. chunky mild salsa
3/4 cup mayonnaise (reduced fat/light is okay here)
1 tsp. chili powder
2 cups crushed tortillas chips
2 cups shredded Cheddar cheese

Brown meat and drain. Combine meat, corn, salsa, mayo and chili powder. In a greased 8x8 baking dish layer 1/2 of meat mixture, 1/2 crushed tortilla chips and 1/2 of the cheese. Repeat. Bake at 350 for about 20 minutes.

*I doubled the recipe and used a 13x9 baking dish for more even heating and the recipe still turned out great. If you double it be sure to keep it in for at least 25 minutes.
