Basil Pesto with Whole Wheat Penne
2 bunches basil leaves
handful of fresh Parmesan cheese
2 garlic cloves
1/2 cup olive oil
fresh ground pepper
Put all ingredients into a food processor or blender. Pulse into smooth. If it looks kind of clumpy just add a little more olive oil until you like the consistency. Let sit. Boil an entire box of whole wheat penne pasta. Drain. Remove and put into a large bowl. Mix the pesto with the pasta and serve immediately.
*You'll notice that traditional pesto has nuts. I don't care for the nuts so I leave them out. If you were wanting to add them you would use about a 1/2 cup of toasted pine nuts.
*This dish stands alone great, but also works well with grilled chicken as a side too.

Hey girl! Lovely pictures!!! How are the wheat noodles? Are they hard like mine come out? I don't knwo what I'm doing wrong. They always come out a bit too much al dente :(

The Southern Housewife: You need to let the noodles go for about 2-3 minutes longer than you would a regular dry pasta noodle. I too had the problem with them being hard until I let them go a little longer about 3 years back. Now I've got PERFECT pasta every time. Hope this helps!!!
