3 cups sugar
1 cup vegetable oil
3 large eggs
1 can (16 oz.) pumpkin
3 cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cloves
½ tsp allspice
Preheat oven to 350. Beat sugar, oil, eggs and pumpkin in large bowl until well combined. In separate bowl mix all dry ingredients. Put 1/3 of the dry mixture into the pumpkin mixture and beat until combined. Repeat with remaining dry ingredients. Pour into two greased loaf pans and bake for 1 hour. Let cool on wire rack in pan for 10 minutes before removing. Let loaves continue to cool for about 30 minutes or until they are no longer warm. If you decide to freeze a loaf make sure it is completely cooled before wrapping it in several sheets of foil. It can freeze for up to 3 months.
