2 tsp baking powder
1 tsp salt
6 tbsp butter
1 3/4 cup packed light brown sugar
2 tsp vanilla extract
2 large eggs
1 cup butterscotch chips
1 1/2 cups pecans, coarsely chopped
Preheat oven to 350. Grease a 13x9 baking pan and set aside. In small bowl combine flour, baking powder and salt. In 3-qt. sauce pan, melt butter over low heat. Remove from heat. With wooden spoon, stir in brown sugar and vanilla; add eggs, stirring until well blended. Stir flour mixture into sugar mixture just until mixed. Stir in pecans and butterscotch chips. Spread batter evenly in baking pan. Bake for about 30 minutes. Let cool completely before cutting.
*Fun variations include substituting the butterscotch chips for 6 oz. semisweet chocolate chips or stirring in 3/4 cup flaked sweetened coconut.
