Tara's Chocolate Truffles

6 tbsp chilled butter
12 oz. semi-sweet chocolate chips
1/2 cup firmly packed powdered sugar
6 egg yolks
1 tbsp vanilla extract

Create a double boiler.  Cut butter into chunks and place on top of boiler.  Add the chips and then the powdered sugar.  Let melt while you...

Beat the egg yolks in a small bowl with a whisk.  Whisk until they are combined and fluffy.

Stir the chocolate until it's completely melted.  It will be thick, almost like fudge.  Add egg yolk mixture a little at at time and stir constantly.  Stir in vanilla.  Pull off boiler and put into the fridge for 3 hours. 

Rolls balls out of the chocolate mixture and roll into powdered sugar, cocoa, coconut or even crushed candy canes. 

Makes about 3 dozen.
