Country Breakfast Casserole

My mom asked me to make a breakfast casserole for this morning and I knew just what to make. I found this recipe a while back and had been waiting for an excuse to make it. Trust me when I say it's not your typical breakfast casserole. The cumin in it kind of gives it a mild tex-mex taste.
