Okay so I have decided to try my hand at making homemade bread again. My last attempt was several years ago and it was a complete disaster. I find that I have a hard time using anything where I have to add a yeast packet. Does anyone have any suggestions or tips on how to make the "perfect" loaf of bread??? Does humidity have anything to do with it? Is there anything extra I should take into account since I live in the south??? As you can tell I am really wanting to do this right.

Working with yeast is tricky. I just use my bread maker but I know you are going for the homemade affect. Good Luck.
