40 Cloves of Garlic Chicken

You read it right...40 Cloves of Garlic Chicken!!! A fellow blogger e-mailed me this recipe and I thought I'd give it a try. It's super EASY to put together and it uses a slow-cooker which means my entire apartment doesn't heat up. The taste is incredible. The garlic actually tastes very nutty. I'll warn you though, your house will smell like garlic for at least 2 days!

1 softball sized yellow onion, sliced
3 lbs. chicken (I used boneless skinless chicken breasts)
2 tablespoons paprika
2 tablespoons salt
1 tablespoon pepper
1 tablespoon olive oil
40 cloves of garlic (I used a 6oz. jar of peeled whole garlic cloves I found at Kroger)

Place sliced onions in the bottom of a slow-cooker. In a large bowl, mix remaining ingredients and then pour into slow-cooker on top of onions. Cook on low for 8 hours. Serve over rice or egg noodles.

*I'm using leftover chicken to make chicken salad. I can't wait to have that for lunch tomorrow!
